We’ve got a new item for you tomorrow at the market…Napa/Chinese Cabbage! Look at those beautiful heads!
Chinese cabbage can refer to two distinct varieties of Chinese leaf vegetable. The first variety, Chinensis, do not form heads; instead, they have smooth, dark green leaf blades forming a cluster. An example of this variety is Bok Choi. The second variety, Pekinensis have broad green leaves with white petioles, tightly wrapped in a cylindrical formation and usually forming a compact head. The cabbage we are bringing to market is of this second variety. The website sheknows.com has a great collection of recipe ideas for Napa Cabbage including:

Hope to see you at the market. Ed and I will be attending as customers tomorrow as the crops are slowing down and it is time for Christina to start tightening the purse strings for the long winter ahead. I will be back for the last market though to cover for Christina who will be on a well-deserved vacation.
