This week we will be featuring Padron peppers. Pimientons de Padron are a popular tapas in their country of origin, Spain. These small green peppers are cooked over high heat in a couple of tablespoons of oil until they are blistered on all sides (~10 minutes). Sprinkle with salt and serve. What makes these peppers different is that one out of a dozen are hot. The eleven others are mild and tasty. Think of this dish as Spanish Roulette. Fun to make for a backyard BBQ. Put a cast iron skillet on the grill and cook them right in front of your guests.
