Happy 4th of July to all! Arthur has done his best to disrupt the festivities, as well as our harvest. Since we have had so many damp Fridays this season, we were able to push through and bring in all that we needed for market.
This week we will be bringing Copra Summer Onions to the market. Summer onions are immature onions that are pulled prior to their greens dying (turning brown and falling over). Both the bulb and greens of summer onions are edible.
The greens dying is an indication that an onion has reached maturity. Onions harvested at maturity must be “cured” for a few weeks. Curing enables the onion to seal itself off and the outer layers to become paper-like. Cured onions are what you would typically purchase at the grocery store.
Scallions differ from onions in that they will never form a full, harvest-able bulb.

In addition we will be bringing the following produce from fellow Urban Edge farmers Scratch Farm.
Green Filet Beans
Zephyr Summer Squash
Green Zucchini
Like Blue Skys Farm, Scratch Farm grows chemical and pesticide free.
Of course we can’t forget Chrisina’s beautiful flowers!
