Farmer’s Market – August 9th

August 8, 2014 By Blue Skys Farm

Do you know what this vegetable is?

This beauty is purple kohlrabi.  It is a member of the Brassica family, which also includes the vegetables cabbage, broccoli and kale.  Nutritionally, it is a very good source of dietary fiber, Vitamins B6 and C, Potassium, Copper and Manganese.  Kohlrabi may be eaten either raw or cooked.  Here are some recipes you may want to try.

Butter-Braised Kohlrabi
Kohlrabi Fritters
Kohlrabi Slaw
Kohlrabi Soup
Vegetarian Spring Rolls with Shredded Kohlrabi
Kohlrabi Chips
Kohlrabi Home Fries

I bet you didn’t think there were so many things you could do with kohlrabi, eh?
