What’s in abundance this time of year at Blue Skys Farm?

winter spinach | Blue Skys Farm | Cranston, RISpinach, Spinach, Spinach!

We’ve got Red Bordeaux, Red Kitten, and Tyee.

Fun fact about spinach! Spinach is a highly nutritious food; however, many of the nutrients in spinach are not easily bioavailable—that is, they are not easily absorbed by our body.

To get the most nutrient bang for your spinach buck, it is recommended to eat it with a high-quality source of fat, to increase absorption of its fat-soluble vitamins.

You can easily coat your spinach with a small amount of olive oil before cooking. Sautéing and steaming are ideal cooking methods for nutrient absorption, because they help retain the water-soluble vitamin content of spinach.

One favorite is this awesome-looking recipe for creamed spinach!

If you prefer raw spinach, maximize nutrient absorption by topping spinach salads with oil-containing vinaigrette. Olive oil, apple cider vinegar and strawberry puree make for a fresh-tasting dressing rich in vitamin C, acid and healthy fat to maximize nutrient absorption.
