Roasted Carrots with Carrot-Top Pesto

Ever wonder what to do with the tops of carrots?  Try Carrot-Top Pesto!   Epicurious has a wonderful recipe here.   The trick to making a tasty Carrot-Top Pesto is to blanch the tops prior to adding them to the food processor or mortar and pestle.  This step helps to soften the tops while keeping their carrot flavor.  Thanks to Bri for this tip.
